Green Beans


What you need

10 oz green beans
1 or 2 red jalapenos
2 scallions (just white part)
3 cloves garlic
About same amount of ginger (as garlic)
Peanut oil
1/2 tspn salt

How to do it
Cut stems off green beans. Slice jalapenos into rings and seed. Cut white parts of scallions into small rings. Chop garlic into small pieces. Chop ginger into smallish pieces.

Fry green beans in peanut oil on low/medium heat (4 out of 9 on my oven) for 5-6 minutes. Remove from heat. Add some more oil and fry jalapenos for 30 seconds. Add garlic, ginger, scallions, fry until it smells good (about a minute). Remove all from heat, toss with green beans and salt.
