Pad Thai

What you need
1/4 cup sauce (see below)
Rice noodles (rice sticks)
Peanut oil
Peanuts (1 - 2tblspns)
1 Egg
Bunch(ish) green onion whites, or shallots (better)
Green onion greens, or chinese chives (better)
Lime (about 1/2)
Other vegetables
How to do it
Soak noodles in hot/warm (not boiling, though) water. Probably 20 minutes, until almost ready to be eaten but not quite. In the meantime, chop peanuts and onion greens/chives and put in same bowl. Chop onion whites/shallots, put in another bowl. Chop other vegetables (red chilis are nice).
When noodles ready, drain and dry. Heat peanut oil over high heat. Add shallot bowl. When ready, throw in noodles, add sauce. Stir frequently. When done (noodles soft and ready to be eaten), move to side and crack egg in middle. Spread egg out as much as possible. Let cook, then sort of scramble it. Then mix with noodles. Add peanuts/chives bowl.
Remove from heat, squeeze lime over it.
Sauce
1/2 cup tamarind paste, 1/2 cup fish sauce, 1/3 cup sugar. Mix. This will be too much for one serving, so put rest in refrigerator. It smells terrible. To make tamarind paste, put 1/2 tamarind brick into 2 cups hot water. Mush with hands until evenly spread out. Then strain (I can't remember how I did that - maybe funnel and coffee strainer? Maybe colander?)
